This simple almond cake recipe is quick and easy, not to mention it works perfectly every time. It's super moist and proof that baking a delicious cake need not be challenging.

This cake is naturally gluten free and naturally sweetened with honey instead of refined sugar.

It's drizzled with a honey glaze and topped with flaked almonds. You can skip the almond and top with yoghurt, or fresh cream, and fresh berries. It's delicious even without toppings and can be served with a scoop of ice cream or custard for an extra treat. Try this almond cake for yourself!

This delicious almond cake is not overly sweet and makes the perfect afternoon tea treat. It is wholesome and delicious at the same time.


2 cups almond flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
4 eggs
2/3 cup honey
1/4 cup olive oil
Zest of 2 lemons
Ingredients – Glaze and topping
2 tablespoons lemon juice
1 teaspoon vanilla essence
1/2 teaspoon almond essence
1/2 cup icing sugar
1/2 cup flaked almonds

Preheat the oven to 180 degrees Celsius. Grease a round cake tin and dust with flour to prevent sticking.In a large bowl, add the almond flour, baking powder, bicarbonate of soda, salt, and cinnamon. Whisk to blend.In another bowl beat the eggs with a whisk. Add the honey, olive oil, and lemon zest and whisk.Add the wet ingredients into the almond flour mixture and stir.Scrape the batter into the prepared cake tin. Bake for 40 minutes, or until the cake is golden brown and firm.Method GlazeIn a small bowl, mix the glaze ingredients.When the cake comes out of the oven, drizzle the glaze over the warm cake. Top with flaked almonds and dust with icing sugar.
